BANANA NUT BREAD

Banana Nut Bread (about 10 servings)

Butter and flour a loaf pan
Preheat oven to 350°F (170°C)

2 large ripe bananas mashed
6 Tbs. butter melted
1 tsp. vanilla extract
2 large eggs, lightly beaten
1-1/3 cups flour
2/3 cup sugar
1/2 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp salt
1/2 cup chopped walnuts

Mash bananas and stir together with the butter, vanilla and eggs. Whisk the dry ingredients together in a separate bowl. Gently fold wet into dry and add the nuts. Fold til blended. Pour batter into prepared pan and bake 55 minutes, cool 10 minutes in pan, and then transfer to wire rack.
Eat with lots of real butter and tall glasses of milk.
