Mushroom, Asparagus and Sugar Snap Pea Risotto

I’ve been wanting to try Risotto for a long time now and I think this turned out pretty good.  There are a million different variations that you can put in risotto, just be sure to add the basics of garlic, wine and cheese.

Mushroom, Asparagus and Snow Pea Risotto has no meat in it and with a crusty loaf and some wine makes a hefty, meatless dinner.
