Wow..what a difference a day makes. It’s only 27° out today. I felt in the mood for some good ‘ol chicken and rice so I prepared this good ‘ol winter standby.
3 chicken breasts flattened slightly
2 bags Minute Rice ( I used 2 bags boil in the bag kind)
1 can cream of chicken soup
1 1/4 can milk
Saute celery for a minute in the olive oil. Salt and pepper the chicken and add to pan to lightly brown. Meanwhile in a bowl, mix rice, soup and milk together. Spray a baking dish with Pam, add the rice mixture, top with some dried bay leaves and add chicken breasts on top. Sprinkle with paprika if desired. Cover with foil and bake at 375° for about 45-50 minutes til chicken is cooked through. Find your warm slippers, and Z-Z-Z-Z!
