THEY ( and you know who THEY are) say that sitting around isn’t supposed to be good for you. Not so, for this calzone. It tasted much better after I went back to it for another try. Maybe it really needed the sitting time, or maybe it just tasted better because my taste buds weren’t scalded.
Take some pizza dough (I used Pillsbury in the tube). Spread it out and start loading your favorite toppings on one side. I started with some olive oil, then added provolone cheese, diced ham, mushrooms, broccoli and garlic. A couple of small teaspoons of ricotta jumped in and finally a couple of handfuls of mozzarella. Then I folded over the other half of dough, pinched the edges together. Brush with EVOO (ahem) and sprinkle with salt and pepper, some parsley and dried basil. Poke a couple of air vents and bake at 400° til nice and brown.
