The Other Rice Breakfast

I made chicken wings last Saturday for the game (ahem). I followed Monica’s wing recipe and found that after 1 hour of cooking, the roaster pan was full of a lot of chicken juices. I drained the juices off into a container and put it in the fridge. In the morning, I skimmed the fat off the top and was left with 1 cup of rich, luscious chicken juice. I put it in a saucepan and added 1 cup of water and brought it to a boil. I stirred in 1 cup of rice and added a bay leaf. Reduced the heat and simmered covered for about 20 minutes. When done added a pat of butter and a little pepper. MMMMMMMM…nice and warm breakfast porridge.
