Not the traditional Mickey D’s version, but basically a scrambled egg omelet for on-the go.
Simply gather up any ingredients you like in an omelet. This can include meats, veggies, cheese etc. Combine 6 eggs with 1/2 cup milk, salt and pepper and any seasonings you wish. Layer your goodness on the bottom of a liberally sprayed muffin tin. Pour egg mixture over each cup. Bake in a 375° oven for 25-30 minutes until egg is set and tops are browned. These freeze well and can be reheated in the microwave. For best results, thaw in refrigerator before microwaving. I like to wrap them in a paper towel when reheating in microwave to soak up some of the liquid that is sometimes released. My recipe made 4 jumbo muffins and included ham, spinach, onion and cheese.
