HOMEMADE GRANOLA

3 cups rolled oats

1 cup almonds ( I used pecans)

1 cup cashews

3/4 cup sweetened flaked coconut

1/4 cup plus 2 Tbsp dark brown sugar ( I used light brown sugar)

1/4 cup plus 2 Tbsp maple syrup

3/4 tsp salt ( I cut back on this a little because the cashews were already salted)

1 cup raisins ( I used dried cherries and I used a little more than a cup)

Preheat oven to 250°. Mix dry ingredients throughly together in a large bowl. Mix syrup, oil and salt in another bowl. Add the wet ingred to the dry and mix thoroughly. Spread onto a ungreased sheet pan and bake in oven for 1 hour and 15 minutes, stirring every 15 minutes until a uniform golden color. Remove from oven and add the fruit. Cool pan on a rack and store granola in an airtight container.
