2- 8 oz pkgs cream cheese, softened
1 tsp vanilla
1/2 cup sugar
mandarin orange segments, drained (any other fruit may be substituted)
Heat oven to 350°. Add all ingredients to mixing bowl and beat on medium low speed til creamy, about 5 minutes.
Line muffin pan with papers and lay a nilla wafer with flat side down in each one. Top each with cream cheese mixture, filling about 3/4’s of the way.
Place an orange section or sections on top of each one.
Bake 15 minutes. Remove from oven and place pan on wire rack til cakes are set and can be removed from pan. Remove each cake and finish cooling on wire rack, then chill. Store in fridge. Easily makes 12, with a little extra left over depending on how much you fill the paper cup.
