2 eggs
1 cup dried Italian bread crumbs
3/4 cup Parmesan cheese ( I used Kraft in the can)
4-6 pork chops ( I used boneless sirloin chops)

1 recipe of Simple Tomato Sauce
Provolone cheese and additional Parmesan
Whisk the eggs with a little bit of water in a dish. Place bread crumbs in another dish and the cheese on a third dish. Sprinkle chops with salt and pepper. Coat the chops completely with the cheese, patting to adhere. Dip the chops into the eggs, then coat completely with the bread crumbs, patting to adhere.
Heat oil in a large skillet over medium heat. Brown chops in batches about 3-5 minutes on each side.
Spoon some sauce over bottom of glass 13×9 pan sprayed with vegetable spray. Transfer browned chops on top of sauce. Lay one piece of provolone cheese on top of each chop and cover each chop with the rest of the sauce. Sprinkle additional Parmesan cheese over all, cover with foil and bake in a 400° oven for about 40-45 minutes uncovering during last 10 minutes. Serve with garlic mashed potatoes or pasta spooning sauce over like gravy.
