Use this simple sauce as your base for everything Italian from pasta to casseroles.
1 28 oz can diced tomatoes (or I used 1 28 oz can crushed tomatoes with herbs and garlic..why wash the food processor?)
4 garlic cloves, minced
1 Tbsp tomato paste
1 tsp EVOO (ahem)
1/8 tsp red pepper flakes
fresh minced basil leaves
Skip this first step if you are using canned crushed tomatoes…Pulse tomatoes with their juices in a food processor until mostly smooth, set aside. Saute garlic, paste, oil and flakes over medium heat til paste begins to brown, about 2 minutes. Stir in the pureed tomatoes and cook til sauce is thickened, about 20 minutes. Add basil and salt and pepper to taste.
